This is a great weeknight dinner, by the way; the prep time is quick, and the chicken only takes a half hour, so you have time to make veggies and side dishes while it's baking. Oh, and when performing step 4, don't use ALL of the breadcrumb mixture. I did it once it and turned out kind of dusty. Just a dab will do ya!
If you want to make this extra garlicky, you can add an additional garlic clove and a teaspoon of garlic powder.
The Ingredients:
- Chicken breasts**
- 2 Tbsp olive oil
- 1 to 2 garlic cloves, minced
- 1 cup dry bread crumbs
- 2/3 cup Parmesan cheese
- 1 tsp dried basil***
- 1/4 tsp pepper
- 1/4 tsp salt
**The amounts that I've given here for the bread crumb mixture will give you enough to coat up to 6 chicken breasts. If you want to make less, you don't need to worry about fiddling with the amounts, although if you want to make more than 6, I'd suggest doubling the amounts.
***Dried parsley works if you don't have any basil.
The Tools:
- An oven
- A baking dish
- Cooking spray
- Two mixing bowls
- Cutting board
- A sharp knife
- Measuring spoons
- Measuring cups
How to make it:
- Preheat the oven to 350 degrees; spray a baking dish with cooking spray
- Mince the garlic clove/s into small pieces.
- In the first mixing bowl, blend the olive oil and the minced garlic. In the second bowl, combine the bread crumbs, Parmesan cheese, basil, pepper, and salt. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Make sure each breast is lightly coated in the bread crumb mixture.
- Arrange the chicken breasts in the baking dish; sprinkle some of the remaining bread crumb mixture on top.
- Bake for 30 minutes or until the chicken is no longer pink and the juices run clear.
