Miss Scarlett Cooks! French Toast Casserole

I don't know about you, but when I think of spring, I think of brunch. Easter brunch, Mother's Day brunch, Sitting-at-home-on-a-Sunday-and-watching-the-flowers-bloom brunch. So I figured, what better way to celebrate the beginning of warm weather than sharing one of my favorite brunch recipes! It's French Toast, but with a bit of a twist; it's in an delicious casserole form. You make it a day ahead, and just pop it in the oven when you're ready. (Although it doesn't have to be just brunch; this is great for whenever you're in the mood to make a delicious breakfast-type meal.)

Just remember, this is a dish that needs to be prepared in advance! This isn't the type of thing you make on the spur of a moment.


The ingredients:
  • 1 stick butter
  • 1 cup brown sugar, plus 3 extra tablespoons
  • 1 loaf Texas Toast
  • 8 eggs
  • 3 cups milk
  • 1 tsp vanilla
  • 3 tsps cinnamon
  • 1 tsp nutmeg
  • 1 tbsp powdered sugar
  • Maple syrup (to taste)
The tools:
  • A microwave
  • An oven
  • A fridge
  • A microwave-safe bowl
  • A large casserole dish
  • A large spoon
  • Two large mixing bowls
  • A whisk
  • A cutting board and knife
  • Mixing cups
  • Measuring spoons
  • Foil


How to make it:
  • Place the stick of butter in a microwave-safe bowl and cook until completely melted. Stir in the cup of brown sugar until completely combined.
  • Pour the sugar-and-butter mixture into the baking pan.
  • Get one of the mixing bowls and whisk together the eggs, milk, powdered sugar, and vanilla. In the second bowl, mix together the 3 tablespoons of sugar, cinnamon, and nutmeg.
  • Place a single layer of bread in the pan, making sure to cover every inch; you can cut the bread up if you need to.
  • Pour half of the egg mixture over the bread, and sprinkle half of the cinnamon sugar mixture over it.
  • Place the second layer of bread, and repeat the layering of the egg-milk mixture and the cinnamon sugar.
  • Cover the dish with foil and leave in the fridge about 8-24 hours.
  • Once ready to bake, preheat your oven to 350 degrees. Let the french toast casserole sit out on the counter (still covered with foil) while the oven comes up to temp.
  • Place the casserole in the oven with the foil still on and bake for 30 minutes. Take the foil off and bake for another 15-20 minutes, until golden brown.
  • Serve with powdered sugar and syrup to taste.
